if you get the Billows, get the $3 damper to go with it.

You probably don't need ATC for the WSK, but it is nice overnight insurance.

I do have the Billows with the damper, though I have not used it yet. I got it mostly for fun...

Thermoworks customer service talked me into getting the Billows when I was emailing them about something else. To be fair, they didn't have to try very hard to convince me...

I'm pretty sure I remembered your advice about the damper when I purchased it.

Give it a try - it feels like cheat mode.

I do find - as Chris points out in his cooks - that it's best to let the cooker get to temp on its own then set up the Billows.

Good to know! I think a few of you all have mentioned to let the cooker get to temp first and then switch the Billows on as insurance. Thanks!
