4 Butts

Hello everyone! Hope you are enjoying the 4th of July weekend.

I bought 4 butts, each weighing about 7 lbs. I am thinking total cook time will be about 16 hours...any thoughts?

I am trying to serve warm at 5:30pm on Monday afternoon...so figure I am going to have to do an overnight smoke and then cooler for a few hours.
 
Hi Bob,

I have done pork butt three times now and each time the time in the smoker has varied. To me, your time looks pretty good, but I'd bet it will be done a little sooner.

In any case, I prefer to allow plenty of room to meet my "deadline" of serving the pork by wrapping them in foil then in a towel and placing in a cooler. I got four additional hours until I hit 140 degrees and to me, the meat seemed even juicier.

Granted, you have four shoulders to keep warm, but if you ask me, holding them for at least an hour is worth it.

In my experience...fwiw...each butt will cook independently, they don't know they have company.
At 250, I would allow 12 hours. 1 or 2 (or maybe all) will be tender before that time. I would start probing after 10 hours or so.
The cooker will want more fuel than cooking 1, of course.
28 pounds of cold meat will soak up the BTU's.
 
BOb, Mike is right. I allow 12-14 for cooking and 2 hours in the cooler wrapped.I've done as many as six butts on the 18.5. Tight fit but they shrink after awhile.
 
Quick questions on holding the butts in a cooler.....how long can I do it and still have the meat be hot and will it overcook it? (i.e., how much does it continue to cook)

I've held butts for 3-4 hours tightly wrapped in aluminum foil, then wrapped in an old towel and placed in a cooler. Temp will go up 5-10 degrees and then start to cool off. Meat was still plenty hot and very juicy. I actually prefer letting them rest for at least a couple of hours before pulling.
