I looked in the wiki but could not find out this info. do I need to use the exact one in the list of parts? will anything close to a NTC 10K Ohm 1% from *online* work?

and that just soldered on to the board across signal and gnd right?

Ill take some pictures when I install it and ill upload them to the wiki for addition
 
If you know the Steinheart Coefficients any NTC will work if you enter them into the configuration. A random 10k thermistor is unlikely to have the same curve as the Vishay 10k but it will be right at 25C and vary from there.

But you'd install it on the "break" connector (the one on the side of the probe jack) which means you can still use the jack if you plug a probe into it (switching the coefficients back though).
