3rd cook on WSM....Baby backs!

So, I bought a used WSM a few months ago off CL. I have cooked a couple turkeys around Thanksgiving and one other small cook.

I had to do some ribs!!

Today, I went to Costco, bought a large pack of baby backs, and got home and started prepping. It seemed as if there was no membrane on the ribs, so I went with the BRITU rub. I cleaned the ribs, trimmed a tiny bit, rubbed, and let them sit for about an hour. Fired up the WSM 18 using the Minion method, and filled the pan with warm water. The WSM settled to about 275 pretty quick. Used a combo of mostly Apple with a couple piece of Hickory.

Started the ribs at 1:30PM and had them off at 5:30PM. I sauced the ribs right when they came off, wrapped in foil, and placed them in the oven (oven was off). The company was not going to be over for another hour or so.

Needless to say, the ribs turned out amazing. I didnt take any pictures. Hard when dealing with a wife, 3 month old, and trying your first cook of ribs on your WSM. But they turned out amazing. Probablt hands down the best ribs I personally have ever cooked. Not to say they are the best ribs ever, but easily the best I have ever made. Gives me a great baseline of what to expect, and to tweak and get better and better!!

A HUGE THANKS to TVWBB and these boards for giving me the knowledge to make such great food. The wife ate a bunch of ribs, and she hates 'em!! That has got to say something right??
