Yesterday I did my 2nd smoke. I chose baby back ribs. I have for the longest time searched and experimented to get the elusive tenderness that is the mark of a perfect rib. I'll tell you what, I would find it extremely difficult to believe that it could get better than I did yesterday. I was so freakin' happy when I did the tear test, to see them tear with very little pull, it was amazing. My first thought was literally - Oh my God! After years of trying (through various methods) I DID IT!!! This is where my thank you comes in. To all of you that have helped me out getting started and providing advice on the do's and dont's and to the moderator of this site and all you Q Veterans that provide tips and advice, I pledge a huge THANK YOU to you guys! Even though I have the 22.5 WSM, I was able to take the cooking process as described in the BRITU Recipe and adjust it for the 22.5 WSM. Once I got the smoker down to 230 I put the ribs on and 4 hours later, with only a few vent adjustments - DONE! I'm lovin' my WSM. If anyone is interested, I used the cooking log from this site and can send it to anyone. I also used my own rub and bbq sauce. I also took pictures because I needed the proof of just how tender they were. Thanks again guys - Next up, perhaps the HH Brisket!
