Was kind of bored this morning so I grabbed a 5.5lb butt from the store, found a new rub recipe online, and fired up the WSM.
Long story short - meat went on at 8:30AM, came off at 4:45PM. The WSM stayed locked on at 240 - 250 all day long. Only had to make a couple of slight vent adjustments due to the wind picking up.
The new rub recipe yielded much more bark than my first butt, and a slightly different flavor and texture.
One question - when you have charcoal left in the box after you're done cooking is it better to close all the vents and let the heat die off or open the vents wide open and let it burn off? I had quite a bit of charcoal left over and it probably could have kept going well into the night. So I closed the vents because I don't want any accidents.
