Well, after my first fiasco with a butt that didn't work out I decided to give BBs a try. I used the BRITU rub and guide for these and they were honestly the best ribs I've ever had. Smoked them with cherry and hickory (could have been more smoke). Onto the q-view!!!

How long did it take the smoker to drop to ~250 lid after lighting up two chimneys full plus the smoke wood? The reason I ask is that today I smoked baby backs, not Britu, but I wanted to try, just for kicks, Chris' method of firing up the cooker that he talks about in his Britu column in the cooking section. I have two chimneys, so I loaded each, lit them and dumped them when they were going well. Added the smoke wood and let all that burn for a while, maybe an hour. When I assembled the cooker, my temp was ~350 so I waited a while, but shortly thereafter couldn't wait any more, assembled the cooker and put the ribs on. Based on an older post I ran into, I cooked for about 2.5 hours, foiled for 45 minutes, then without foil for half an hour. Funny how things work out, as they were my best ribs to date. Go figure. It just shows the wealth of knowledge and experience available here. Yours look beautiful. Hope you enjoyed them.

It took well over an hour for it to get down to 275 and I just put them on. I couldn't wait any longer either. After about another hour it was in the 250 range. I ran for 3 hours then flipped them. Ran it at 275 for another hour and a half with no foil. I also only did lit chimney, then a full unlit chimney and wood on top of that. Let it burn until the coals were all grayed and the smoke wood was engulfed.
