1st timer question

I am going to fire up my new WSM this weekend and smoke 3 slabs of baby back ribs. What configuration should I use 2 on top, 1 on bottom or the opposite?

Hi Ken,

Welcome to the boards and the world of the WSM!

3 slabs of baby backs is not a problem to fit on the top grate. This will allow you ease of access and all the meat will be at the same temperature.

You can roll the ribs and skewer (the technique is described elsewhere on this site - under the Cooking tab above) or, if you have a rib rack, you can use that.

My preference is to use a Charbroil rib rack, cut the slabs in half and cook on the top grate. You'll have 6 halves which will fit nicely into that rack. I'm not a big fan of rolling and skewering, but many do and it must work well.
