1st Shot at Beef Ribs

Along with my usual spares I smoked a rack of really meaty beef ribs. They went for six and three quarter hours and although they could have gone a bit longer they were really good. So much so I'm tempted to say I prefer them over pork spares. There was a lot of meat and a beautiful smoke ring, not too fatty...just a bit undercooked, I mean the meat wasnt falling apart. If I could ever figure out how to put pictures on here Id love to show them to all of you. BTW, I got the pork spares down to a science...finally. This batch only took 4 hours to cook, they were a bit thin. Goes to show you the saying is true...its done when its done.
