AFter it's several hundred mile journey, my first pork belly had it's day. I decided to do a rotis version based off a couple of different versions I've looked up. I made a bourbon marinade and let it soak for about 6 hours.
Most of the receipes I saw had it on high heat for 45 minutes then med/low heat for another 2 hours our so until 150/160.
Mine hit 160 in an hour and a half. Not sure what to make of that. Here's the results:
It smells good. It tastes kinda porky. The bourbon didn't do a whole lot. I'm not sure if this is the way it's supposed to be or not. I'm not sure what I was expecting. It's good... I'm just not sure about this though.
