A 17 pounder went on the WSM @ 8am. I am going to wrap it at 165 to an internal around 190 as in the Cooking Topic sections. Anyone have a suggestion for rest time? Does it pull like pork shoulder? Thanks.

If you are going to let it rest in a cooler wrapped in a towel it will hold temps very similar to a pork butt, 4-5 hours.

If you just want it to rest before eating, I would let it rest 1 hour, your temp should be around 190-195, and it should pull just like a butt. You will enjoy it, let us know how it turns out.
 
Thanks, I will be chopping/pulling tonight and then into the foodsaver. Looks like I will let er rest about an hour.
