Hey all,
The best I could find around here this late in the game was a 4.6lb flat cut brisket. It's smaller than the huge cuts Iv'e seen here. But looks like a good starter size to me. It only has a thin layer of fat on the bottom side. I dont think this is a midnight starter. What do you think. Does anyone marinade these? How long to cook? What do you baiste it with. This is completely new for me.

I would use the Midnight Brisket Rub and stick to about 1.5 hours to 2 hours per pound. Plan on a 7-8 hour cook.

I would keep the fat on it since it is smaller. I also suggest throwing as Butt on the top rack since you have it lit. The Butt will baste the brisket during the cook.

Thanks Clay,
No time to go out and get a butt. I am just cooking for myself. Slim pickins around here anyway now. I want to learn to smoke brisket. I hear all kinds of good things about em. New teritory for me.

Be careful not to overcook it. Remember that there is some shrinkage depanding on the fat content and the temp you cook at.
