Pre cooking our Christmas turkey again this year. This 18 pounder has been on the NG rotisserie for 40 minutes using only the IR burner. Will be broken down and vacuum sealed when it's done. After doing this out of necessity last year, decided it's just too convenient so now it's SOP. Just pop the sealed bags in a pot of boiling water and simmer for about an hour. Comes out of the bags just like it went in.
