Now I know why folks love the WSM. In an 18 hour 4 butt cook, sand, MM, I adjusted the vents ONCE!!!
The temp for the cooker stayed within 219-235 for the first 9 hours. Went to bed-no alarm-I was confident all would go well. Woke at 3am and all was well at 220F. Got up at 5.45 and temps dropped to 180F for the smoker and 170F for the meat. I added about 15 unlit and 15 lit charcoals. My guess is all it really needed was to stir the coals. I cannot believe how easy that cook went.

The only problem was the ash build-up. Perhaps had I stirred the coals at midnight or at 3, the temps would have stayed up.

It took about 20 hours start to finish-make rub to pulling the pork. This cook was for 20 scouts.
I froze the meat and will reheat in the smoker in aluminum pans. I have gathered that 220F would be just right for reheating. How long should it take for two pans to heat up? There should be about 5lbs. per pan. Maybe next time I will have a vacu-sealer...
