I'm attempting to do brisket point, chicken, tri-tip and moinks for labor day bbq dinner. I've got the general timeline for the chicken, tri-tip and moinks in the three hour or so range.
I asked my butcher, and he sells just brisket points, which is perfect, less time to cook (i can sleep some) and its my favorite part of the brisket.
My question is, how long do i need to allot for a brisket point? I would like to sleep somewhat. I am thinking i'll have 2 or 3, 3 lb points.
My regular whole brisket cook is: 250 for 8-10 hours until i get some bark and an internal temp of 150 degrees.
Then foil and put on the smoker until about 195, 1 - 2 hrs.
I was going to put the point in the faux cambro cooler until 30 minutes before guests arrive.
Then cube, put in a foil dish with a little bbq sauce, some of the foil drippings, and back on the smoker until their crispy. 15 mins or so.
Anyone have a ball park idea how long it takes to get the initial bark and the foiling up to 195 for the smaller brisket points? I need to get the meat in the faux cambro so i have at least 3 hours to cook the chicken, tri-tip and moinks.
