14 lb Turkey on SMW

So, smoking my first turkey on my SMW. Any thoughts from some old pros? how about how long should I expect? 250 degrees or 325? I've heard both. Covering the ends with foil to keep from burning. Should I use water in the bowl or not? Going with Apple wood. Thanks for any advice you can provide.
