10lb Christmas butt (pork)


 
I'm using a 22" Performer. With a 10 lb bone-in butt, my goal is to be done in 7-8 hours. so, I realize I'm heading into the high heat arena. I put it on a couple hours ago, but wondering what people think my target fire temp should be. 375? It's about 30°, and I'm having a hard time keeping it over 330. Vent open 100% on the bottom, and about 75% on the top. A VERY slight breeze, but even with that I saw the lid thermometer drop 20° in about 15 seconds!

I would cook at 300ish. If when you have 4hrs left and its not 170 internal I would foil to speed up til probe tender. Try to let it rest for at least 30 min under a foil tent. Should be able to do in 8hrs or so.
 
Just got home for the night from eating some of the BEST pulled pork! the grill ended up on the cool side for the first couple hours. struggling to keep above 300. I added more coals twice and made sure it was stoked somewhat frequently until the fire hit about 375. After 6 hours on the nose it was 205° and falling off the bone. The bark on the bottom was maybe a little dark, but over all - a success!
