1 2 3 method?

Hi,

I remember reading about a "1 2 3 method" for ribs (I think that's what it was called)

I'm unable to find it now.

Can someone steer me in the right direction?

Actually, it is 3-2-1. Smoke for 3 hours, foil with some juice for 2 hours, then unfoil and crisp back up for 1 hour.
 
The 3-2-1 method is a ratio of time cooked out of foil, then in foil, then out again. It is not necessarily hours. There is not really a set recipe, it's more just a technique to accelerate and tenderize.
 
Thanks Doug, i did that i was looking for stogie's original post/receipe for the 3-2-1 ribs. I found bits and pieces of the method just wanted to see the whole thing. Thanks Bryan

This isn't Stogie's original post but just 5 weeks ago, he posted this explaining exactly how he does his back ribs, which involves a variation of the 3-2-1 method. Is it what you were looking for?
