Joan's Butt Rub
1/3 c salt
1/4 c sugar
1/4 c chili powder
1/4 c mixed dried peppers
2 T onion
2 T garlic
2 T black pepper
2 t cinnamon ***
1 t coriander
1 t cumin
1 t sage
1 t ginger
1/2 t celery seed
1/2 t allspice
Notes:
I use granulated sugar because I always have it on hand and I do not want to dry brown sugar.
The last batch of rub I made with: guajillo, mulato & ancho peppers. The best way I've found to use dried peppers is to de-seed and cut up peppers, place them in a medium-hot cast iron skillet. Stir and remove when you can smell them. Do this in small batches ( don't burn, we are just trying to awaken the flavor). Grind.
Onion is usually dried onion I grind. Garlic is granulated.
Black pepper is fresh ground.
***Cinnamon is the sleeper spice that really works well ( Thanks to Kevin Kruger).
Coriander, cumin, sage, celery seed are whole and fresh ground.
Sage may be substituted with thyme. Another substitution is fennel.
I grind with a $20 coffee bean grinder.
Just like meat...fresh is best with spices. I'll always by whole seeds and grind.
