Brand New 18.5 ready for work

Hey Gents,
I just got my new 18.5 wsm put together and ran one load of coals through it for a dry run . I wanted to see how the temp gauge reacted compared to my CDN probe thermometer. I'm really stoked now to get some meat going. My wife wants a smoked turkey for Easter and gave me the green light to practice. Yum.
I'm going to go with the hot and fast method with apple wood chunks and KBB.
What sort of tips can you share with me? Making mistakes is going to be half the fun.
