So we all have heard of Dougherty's wings....Well tonight, let me introduce Dougherty's ribs.
1. Used 3 racks of spares trimmed fairly well. nice rectangles!
2. Used the rub recipe as listed except I cut the salt in half. Chiptloe powder for the heat element.
3. 2 hours on bullet then used trigg method...subbed jerk seasoning for the tiger sauce and just a bit of beer into the foil.....1 hour, then took off and out of the foil. saved the juices and mixed with a heavy dose of agave and some additional brown sugar. used that as the baste. 1 hour with a baste every 10-20 minutes
phenomenal!
