Pulled Chicken from boneless breasts

Being costco shoppers, I've found myself sitting on a boatload of boneless chicken breasts. I'm knida in the mood for some pulled chicken this weekend. I realize this is usually made with dark meat....but is it doable with boneless white meat (yes, I won't have to "pull" it)? Any recipe idea?
 
Yea, you could grill/smoke them till just shy of done, then poach or simmer in some stock, beer or wine till shreddable with forks, than reduce the liquid and add BBQ sauce.
I like leg quarters for pulled but BSB should work if you don't overcook them.

Thanks Tim. I actually smoked/pulled some leg quarters yesterday and they turned out great.
I'll try the poaching method and see how it pans out.
 
I have done smoked breasts and shredded them before. I brine breasts for 2 - 4 hours and then smoke preferred way until temp. After letting rest for 10 - 15 minutes, place in KitchenAid stand mixer with beater attachment (2 at a time) and turn to medium - once broken up a bit, turn to high and the chicken will be nicely shred.
