2 inch steak

Howdy,

I am loving my mini smoker. I have found that I can get quite a range of temps too. As such, I was wondering if anyone has tried smoke/searing any thick steaks?

I went to the grocery store and requested a 2 rib roast but I ended up with a 2 lb (1 rib steak). I was thinking of low heat smoking the steak at around 275 to a certain internal temp and then disassembling the smoker and letting the coals get super hot for a final sear.

Does anyone have any suggestions for a steak this big. I am used to 3/4" ribeyes.

That should be fine, especially if you like your steak closer to medium. It'd have plenty of time to pick up some good flavor.

OTOH, I like steak pretty rare so I'd just grill it direct on each side to develop a nice crust.
 
That's basically what I do with prime rib. Smoke it low and slow until it gets to temp, rest it, and *then* sear it. No reason it shouldn't work with a thick steak - the outer brown part that isn't medium rare isn't any thicker than the smoke ring.
