Dad’s German Sweet And Sour Cucumbers
Ingredients:
3 Large Cucumbers
1 Large Onion
Apple Cider Vinegar
Sugar
Salt and Pepper to taste
Directions:
Starting with room temperature cucumbers, peel and slice. Also peel and slice the onion into rings and add to the cucumbers. Place them all into a tupperware container. Salt (generously) and pepper them to draw out the moisture. Cover and place in fridge for 2 hours or more.
Remove from fridge, and squeeze cucumbers and onions with hands (important), and drain off all of the liquid. Then mix 1/3 Apple Cider Vinegar to 2/3 water. Add 6 - 8 tablespoons of sugar (or more or less to your taste) When you are satisfied with the taste, add to the drained cucumbers and onions.
Place back in fridge to chill before serving.
