I've been hijacking all the other threads so I figured I'd start my own... Threw a brisket and 2 racks of Beef Spare Ribs on around 10 a.m. The ribs are done and resting. The brisket has about 15 degrees left (I like mine wet and pulled). Been drinking grilled and smoked Bud Lights all day -...

I'm right there with ya brotha. I drink the cheap stuff, but damn it, it does the trick.

I got a brisket and a couple beef spares. When it is all done I will post some pics, start to finish.

Also my first brisket on the smoker. I tried one on a grill a long time ago and vowed never to do it again until I had a good smoker. So far so good. Taking that baby up to 208 so that it falls apart. I also have a couple racks of Beef Spares on the bottom grate.

Got the WSM ready to go for a 3 am start. Looking forward to a slightly cloudy forecast, but only because we will be filling up the skies with smoke! :D :wsm:

Chicken was on the bottom for reasons stated ^. :D Thanks for the comments and suggestions guys. Next up will be a butt. I love pulled pork and have spent many restless days/nights on the ECB. I really am excited and glad I did my homework on the WSM. This thing rocks!

Just wanted to share my first smoke with you all. I came from an ECB and I can say that this thing was a 1,000,000x improvement. I could never get the ECB over certain temps and when I did get it to smoker temps it was hard to maintain. Basically I had to wait until summer to smoke with the ECB...
