Here is some Chicken we did the other day on our WSM. A few hrs 230-250ish. Used Kingsford and Peach chunks. 1st time using Peach and I really liked it. Gonna do some Cup-Cake Chicken this weekend..
12hrs on my WSM @ 225-250ish. Cherry/Apple/Hickory mix. Wrapped and foiled for 3hrs while Burnt Ends finished. Flavor was great but I though slightly on the dry side. Family though it was fine.
Burnt Ends came out perfect.
