    Knives

    I use all dexter russell sofgrip knives from restaurant depot or online . great knives for the money. i typ only have a slicer and boning knife for most everything. use whatever feels comfortable in your hands heres the one i use for brisket dex russell

    Make a big ole pot of chili. Cheap to make and easy to quickly server to 200 people. All you need is a ladle and a stack of Styrofoam cups or little bowls.

    How many WSM's should i use for competing?

    I bring (3) wsm with me to all contests. I typically only use (2) On the occasion that my big meats are running behind I light up the 3rd.

    so unimpressed by thermapen build quality

    My t-pen was in my pocket when I pushed or fell (cant remember ) in a pool. I let it dry out in the sun and two years later it still works great
