Tom thats a good point with everything I'v read low-n-slow is the way to go I planed to cook all night for a party tomorror at 2:30 the next time I'll do the fast method (more sleep) but for now it's to late to turn back.

lid temp is at 227 second grate is at 201 with oven thermometer bottom vents almost closed i'm cooking two butts 8lbs ea. should i open vents to bring up the lower temp or just leave it be? its be holding 228-226 for an hour now?

How long do you smoke fully cooked sausage.I am picked to cook for a party of 20-25 people I am doing two pork (no problem) but when do I put the sausage on?
