    Another early morning cook.

    North of Atlanta the air is warm and moist, and my butts and brisket are cooking nicely. I wasn't up nearly as early as you, however. Mine made it onto the smoker at 6:00, so there's a 50-50 chance we'll have BBQ for dinner. Just depends on how long these decide to take.

    My husband has been looking for the Brighton Hot Dog Shoppe chile recipe forever (Western Pennsylvania). I personally think it's much better that the Varsity (but then, I grew up in CA, so what do I know about chili dogs...just ask my kids!) Karyn

    2nd brisket smoke..still needs improvement

    Thanks for the info. Guess I'll just have to play around some more...but my instincts tell me that I'll probably second your opinions....maybe two briskets at the same time, one foiled and one not, just to get a direct comparison.

    Stupid question time....just exactly how and when do you foil? Doesn't it change the texture of the meat? I just started smoking and am having a ball reading and learning, but I think I'm becoming somewhat of a geek. For the past hour, I've been reading Dr. BBQ's book like a novel! Thanks, Karyn
