    Performer grate holder

Hmmmm, never tried that before. I just hang it off the screws that hold the bowl to the frame. IMO, the Performer is the best thing ever!!

    Salmon Smoke

Try, washing off he cure (with water). Then dry w/ paper towels and let the salmon dry before smoking. When i do it that way, i have no issues with salty taste. I beleive Alton Brown, recommends the same process, but i think he uses fans to dry the salmon.

Why do you use the gas assist?

Not sure about the pyramid, I always use the chimney. I beleive the 16.4 bottles will work. I use the coleman bottles and I think they are 16.4 oz I seem to remember the size throwing me off too. Lowes also carries the 16.4 coleman bottles in the section by the grills and the 14 oz bottles...

Why do you use the gas assist?

Question 1: correct I don't use newspaper or any other starter (oiled paper towel, weber starter cube, etc.). Question 2: I actually don't use the charcoal holders. I just put the unused coals from my previous cook in the chimney then add add'l fresh coals. I use an old set of tongs to...

Why do you use the gas assist?

I agree with John, put the charcoal in the chimney and the chimney over the gas ligher. In a few minutes, the bottom of the chimney will be going. Shut off the gas (to conserve it) and let the chimney finish lighting on it own. I like the gas assist as you don't have to worry about newspaper...

I have not. I like the idea though. Just make sure it's not to difficult to access the ash catcher. My only other consern would be air flow.

    First Cook......Inlaws

Not to discourage you, but I would not have people over the first time I used a new grill or smoker. I think there is a learning curve for every cooker so I would practice a few times be for I added the pressure of entertaining. If it doesn't turn out so good, talking them into tring your Q...

    Temperature Regulation via Dome Vent

I was having the same problem with keeping the temp down in my kettle. I was using fire bricks and the mini-minion method. You might give this a try as I’ve had some success this weekend. I used the firebricks but not the minion method (no offence Jim). With the top vents fully open and...

    WSM vs BDS

Does any know why BDS (Big Drum Smokers) do not require a water pan or heat shield like the WSM does? Is it possible to keep temps down in the WSM with no water pan at all? If so, how do you do it. I've heard of people using sand or even foiled, but I was wondering if its possible to go low...
