    Looks good to me too, but like above poster said cook to a tenderness not necessarily a temp. If you would like a more pronounced smoke ring try a little celery seed. It's high in nitrates and helps form a better ring.

    I'm new to the forums myself here and let me say you did a great job! I've learned a lot myself from this forum and the web as well. Aaron Franklin has some really good vids on youtube. Plus if you get the chance and are in Austin stop by and sample some of his cooking it's really great...
