    20lb turkey? Spatchcock?

    I've got two 20lb turkeys to smoke for Thanksgiving. Everything I am reading is basically saying only do a spatchcock with a bird that size and run it at 275-300 for 11-12mins/pp. Does this sound right to this group?     Cuban pork roll w/ skillet potatoes and chili brussel sprouts.

    Thanks to Don's inspiration, I decided to make a Cuban Pork Roll tonight. I also made some skillet parmesan potatoes and sweet chili brussel sprouts. It was an unbelievable meal!

    2 - 10lb Pork Shoulders

    I am getting ready to start cooking 2- 10lb bone-in pork shoulders. I plan on using the Minion method and cooking on both grates between 225-250. I'm guessing this will take about 20 hours - what do you think? Also when should I start mopping and when should they be flipped?
