    New Smoker, several cooks

After 12 years of faithful service through NY, AK and AL, my electric smoker has moved on to its new home with a snowbird who winters in FL. I have a new pellet smoker (Green Mountain Grills - Davy Crockett) to accompany my Weber Q1200 and Jumbo Joe, and have spent the last month getting...

    NY Strip Steak Marsala

We've tried Ribeye, Porterhouse and now NY Strip, we both prefer the taste and texture of the Ribeyes. We tried these by themselves, but the plan for tonight was always to use up some mushrooms for Steak Marsala. Steaks on the Q1200.

    My First Tri-Tip

Don't think I've ever had Tri-Tip before, not sure I'd ever heard of it before I joined TVWBB, and surely never cooked one, until today. 2.25# Tri-Tip Seasoned with salt, pepper, brown sugar, paprika Smoked to 110 degrees, then seared on my Q1200 for 4x1 minute. Was supposed to go back into...

Smoking pulled pork after it's cooked?

My wife is having a little gathering Saturday afternoon, and I was just informed she'd like pulled pork, the problem is that I'm not here on Friday to smoke it, and not enough time on Saturday before guests arrive. It looks like due to timing and late notice I'm relegated to pressure cooking a...

    Boneless Beef Ribs

I while back I found some cheap boneless beef ribs, something I had not cooked before. (I tear up pork ribs though!) I forget how I made them the first time, it may have been in the pressure cooker with some other stuff, but I wasn't impressed, so I froze the remaining 4 of the 6 pack. Tonight I...

    Fired up the smoker today

First time smoking chuck roast (~2.7 pounds), turned out awesome about 5 hours of direct smoke, and 4 wrapped. 7 pound pork butt took about 11 hours, lots of flavor. Delish on a fresh roll served with coleslaw and tater tots.

    Christmas Steaks

Merry Christmas I wanted to see which I liked better, a porterhouse or ribeye, so we got one of each for xmas dinner from the local butcher. They were taken out of the fridge 90 minutes before grilling, and coated with kosher salt and pepper. Right before they hit the 550 degree Q-1200 they...

    Ribeyes on a Q

I'm kind of a ground meat and tacos kinda guy lol I decided about a month ago that I wanted to try a dry aged steak before I die. I called the local steakhouse that everyone raves about (Ruth's Chris) and asked them if their steaks were wet or dry aged. The person answering the phone had no...

    New Grill, New Member

Hello, new to Weber and the forum, glad to have made the switch. In the 2 weeks I've had the little Q1200, I have noticed a definite improvement over my last cheap propane grill, so much so, that I last night I ordered a Jumbo Joe to augment my setup. I have a Kamado that I find is too much...
