    We've all seen butt cooks and this one isn't anything special, aside from being the first one I've done on this cooker. Got it going around 7am, rubbed with a combo of Meat Church's 'The Gospel' and 'Holy Voodoo'. I'm using both a Meater Pro and Weber's probe.

    Put this on around 9:30 last night. Mostly Holy Cow, with a little Holy Voodoo. I've been running at 200 and am sitting at about 163F internal. I'll wrap at 175 and bump the Sear+ up to about 260 to finish, then rest for tonight's dinner.
