    Smaller Brisket Flat...

    I got a 22.5" WSM about 3 weeks ago and have done multiple baby backs, two 8lb pork shoulders, a chicken and some spare ribs. Tomorrow doing a 5.35lb brisket flat. Advice? I usually don't wrap anything and don't have any BP. My smokers tends to like 250 degrees or so, but I can control it pretty...
