    Chuck, Thank you. This was the pan seared red filets. My buddy poached them in oil low and slow on skin side only. That color up top is just from hot oil being scooped and dumped on top, and the skin was super crunchy and delicious.

    That's incredible. Looks like it's fall apart tender. I honestly don't think I could do anything close to those shanks. I'll try...just for the fun of trying...but I don't think I could replicate that. I could do those potatoes though. Those look delicious as well.
