Pretty sure the Weber Q has had the same style grates since the Q was introduced....at least in the USA. I've never come across one with a different grate. You can buy different ones from 3rd parties though.

To remove the burner tubes, you don't have to remove the bolts you have arrowed in blue....if you were wanting to paint the firebox, then you would want to remove those blow arrowed bolts.

To answer your question about fat, I'm not a fan of leaving large amounts of fat/blubber on any cuts of meat. So I trim most of it off, but leave just a little.
