Limiting charcoal cooks to stuff that takes 30 min or less worked just fine the other night. I did boneless pork chops on Fri night using K-Pro and no issues with maintaining temps. Going to do boneless leg of lamb for Christmas. It's a 5lb roast so I'll do it on the Genesis with the roti.

I may do that as well. The legs, thighs, & wings would all fit in the EZ Que rotisserie cradle, no problem.

I usually do 24hrs or so with the apple brine and it turns out fine.

Congrats on your early retirement! +1 on renting an RV. Though I'd wait until spring. By then the days are longer, warmer temps, more places accessible, etc. Do the RV thing & you won't have to pay for any hotel rooms, etc. Just go wherever you like.
