Scored a Performer Platinum on CL - Deep Clean Time!

Forgot to mention a tip for anyone with a similar performer - if you have any light to medium scratches on the tabletop a bit of Meguires Ultimate Compound worked wonders for me. It buffed off the white scratch marks and did not mess with the final finish. You would never be able to tell they...

Scored a Performer Platinum on CL - Deep Clean Time!

OK, it's time to admit I've got a BBQ problem... but I had no choice! Literally 2 days after I purchased and deep cleaned the Black Performer in this thread I came across an even better deal on ANOTHER performer. (My wife's just loving this btw!) After speaking with the seller he confirmed...

Scored a Performer Platinum on CL - Deep Clean Time!

After keeping an eye on CL for awhile now I finally pulled the trigger on an 11' performer platinum that needed a little TLC. It hadn't been abused but was quite dirty and the grills had been neglected. I could tell a good cleaning would do wonders for this little rig so I loaded it into the...

My Take on the Mini WSM

Great looking build Rick + Keith has given some good advice regarding the basket - I cooked a few times with and without it and there is substantially less ash buildup and it seem to use less fuel overall when it's in. Happy smoking :wsm:

    Maple Syrup Pork Butt

Update: I made another maple pork butt on friday and it was even better then the first! (Thanks for the tips Bob and Bill!) The key differences was the apple cider vinegar in with the OJ, and I cooked to probe tender rather than relying soley on the probe temp. Results were extremely moist...

    Maple Syrup Pork Butt

While researching all sorts of recipes I found a few that noted to rub the butt and then tightly wrap with clear wrap overnight so that it almost creates a slight glaze that sticks well to the meat. In the morning just before cooking I take it out of the clear wrap and the give it another very...

    Maple Syrup Pork Butt

Cheers for all the comments! Thanks Bob, a couple good ideas here. I did not save the juices the first time but certainly will save it today. (just placed another butt on the mini not 10min ago!) and will try the probe after foiling method. Thanks Bill, I'll give the cider a shot instead of...

    Maple Syrup Pork Butt

After smoking a few cooks of ribs I decided to try a pork butt last weekend and thought why not experiment a little! My Canadian roots got the best of me but it turned out great! I'm still very much a beginner so any observations or tips are welcomed and appreciated. This was a 5lb butt...

My Mini WSM build complete with flying saucer

Quick Update: After all the amazing pics I've seen of painted mini's I couldn't resist myself. Taking inspiration from Chad Bmans sweet mini I chose to stick with the Weber theme. The DupliColor Metalcast Red really does look anodized - far better transparency than I was expecting.

    WSM Trophies...

These "micro-wsm's" are awesome! I now need to hatch a plan to obtain one myself :) I actually live in Langley BC but wasnt able to make it to this years event and am kicking myself! Do you think 11 months is enough time to go from a beginner smoker (only 3 smokes through my mini) to being...

First Pork Butt on the Mini

That looks amazing! Very nice work! Did you remove the fat cap on the butt prior to cooking? and if not was it smoked with it facing up or down? I picked up a similar sized butt to smoke tomorrow but am unsure if I need to trim it off or not. It looks pretty darn thick. Hopefully mine turns...

My Mini WSM build complete with flying saucer

Appreciate all the comments guys - this design seems to be working great so far! Hi Chris - Every piece that I used in my mini is stainless steel including the dish that I found at a local surplus store (I believe it's a dog dish based on the shallow depth). Like I said, this setup has been...

My Mini WSM build complete with flying saucer

Thanks for the comments guys. Here are a few shots of the results of my first two smokes - They tasted amazing! Note the hot water tank tray I picked up at home depot to use as a base for the mini ($20) it works great for catching mess. These are literally the first ribs I have ever cooked...

My Mini WSM build complete with flying saucer

First off a huge thank you to this site for introducing me to the mini wsm. My father recently turned 60 so as a special gift the family chipped in to set him up with an 18.5" WSM with all the accessories. While researching I of course caught the BBQ/Smoking bug and decided to build my own mini...
