    I'm with you Tim on the hickory. Post oak, Cherry, pecan and apple woods are my favorite. Oak for brisket & burgers.

    Whenever companies do this quality does go down hill fast. I may need to look for local alternatives. I don't like Kingsford and use lump for burgers and fast cooks. Prefer the uniformity of briquettes for long low & slow sessions.

    B&B competition oak are my go to for longer sessions I don't use a lot of hickory wood, usually oak or cherry, occasionally use pecan. I will probably skip the oak hickory blend

    I saw a similar video from Susie with Hey Grill Hey - Butterfly Pork Shoulder I have tried this and it turned out amazing, Double Bark yummy! Smoking time was about the same as a rack of ribs. Costco sells 2 pack boneless pork butt so it makes it an easy prep.

    I wish they had the Fire Engine Red. I would probably buy the Star Spangled kettle & add the Master Touch Leg kit & High Capacity ash catcher system or Master Touch Ash catcher assembly w/smoke setting, to it.

    Billows $49

    Billows with damper, on Weber Performer. The black tear drop piece above is a 'smoke hole" port cover from SnS grills , so when I am not using the billows I can have another point of air flow control.

    I use 2 Harbor Freight 45deg bent nose long reach pliers. more versatile than a garden trowel. An accessory I use every grill session. Walmart also carries them $5.94.
