Another way to light a chimney

I have one of those pump up type oil sprayers I keep vegie oil in. I use this to spray two paper towels all over on one side (just mist them, no need to soak them). Then crumple up like normal and put in the Weber chimney. The smoke is more black than using newspaper, but it works great. I...

Is this a good idea or not?

Worked like a charm!!!! Did 3 racks of back ribs, followed up by 2 BCC's since the coals were still going strong (pulled the meat for use in salads and chicken & dumplings). Clean up took all of 15 seconds - just remove the top pan foil and throw it away. The foil in the ECB pan (water pan)...

Is this a good idea or not?

Ok, first let me say more often than not, I'm only using the WSM to cook for myself, the wife and occasionally the daughters boyfriend (daughter is not overly fond of anything with rub or sauce on it - go figure. But hey, that's more for me!!!). That being said 90% of the time I don't put...

TVWBB Meat Loaf is a hit!!!

That's a great idea!!! Since all we are doing is keeping the loaf from molding over the grate and preventing it from drowning in the juice, it does not matter how you channel it to the drip pan. Alluminum foil with holes or parchment paper - it's all the same!!! And the best part is I have a...

    Gas Smoker

I saw the one at Sam's the other day also. I believe Grand Hall is the maker of Sam's Member's Mark models as well although this smoker is not listed on the Grand Hall website or in their parts area (yet?). I was also intrigued by this shiny toy and did a google search. Seems you have to...

TVWBB Meat Loaf is a hit!!!

Well, I finally got around to trying the receipe from the site's main page for smoked meat loaf. The meat is a basic meat loaf and I had never tried the mix of sweet brown sugar and nutmeg in a glaze on a meat loaf before. Let me say this - it's a wonderful hit at my house. Smoked it for...

WSM and a E-Z Que Cradle!

Why could you not use the Guru? All they would have to do is make a smaller version of their 22" kettle model (see the link it the original message and scroll down). Then it's still sealed and you get the rotisserie action to boot. If they made a round basket option you could almost get the...

    New Kingsford Sucks!

As we were treking through Kroger earlier tonight, I noticed all the Kingsford "regular" style they had on display were in the new, smaller, "sure fire" goove labeled packages. Seems like it was 18lb bags with wording that it cooks the same as the 20lb bag on it. Did not buy any, but it is all...

    New Kingsford Sucks!

I suppose it is also possible that "Billy Bob Plant Worker" may have been asleep at the switch one day and some of the new Matchlight with 'surefire grooves' got put in a regular kingsford bag. It's not like stuff like that never happens. I bought 100 pounds or so at Sam's Club 2 weeks ago and...

Electric low temp smoker jerky mod for WSM?

I read the Guru post and it sounds like it would work. Only problem is I don't have one to try. I'll gable on the $10 hot plate first and see how it works and let the group know - good or bad.

Electric low temp smoker jerky mod for WSM?

I guess the main unanswered question is will the hot plate element create smoke holding the temps in the 150* range. I think it should as the hot plate will be heating a good volume of air to 150* so the metal pan with wood should be literally "smokin". The 3 lower vents on the WSM would still...

Need tips for Pork Crown Rib Roast in WSM

Ok, I've been so busy with christmas stuff I have not smoked anything over a week (heaven forbid!!!). So the wife came back from the store today all beaming with glee at her find. A nice "crown" rack of bone in pork standing rib roast. It's already cut, shapped and tied into the round crown...

Looking for a source for these...

Yes it is!!!! That's why I asked here instead of one of the "other" q' sites (actually this is my absolute favorite smoking site - bar none...) I'm also amazed at how many folks I see in the Metro Atlanta area.

Electric low temp smoker jerky mod for WSM?

Anybody ever tried a electric low temp smoker mod to their WSM for jerky? I remember the Alton Brown "flower pot smoker" show where he used a hot plate and two ceramic flower pots to make a budget smoker. I am pondering making jerky and one issue seems to be keeping an even low temp for an...

Looking for a source for these...

Wow, A local source no less (I'm on the south side of Atlanta). I had tried a bunch of ways to describe them in google searches and never found them. Of course I did not think of a pizza pan as the name. Thanks....

Looking for a source for these...

Does anybody know where to buy/order the round screen racks like in this picture? Cold smoking photo I would like to find some to use for smoking jerky in my WSM by stacking a bunch of them a inch or so above each other with spacers. My friends and I prefer the round type of jerky which does...

    Deal on WSM?

Well, I was going to suggest cooking.com as they have a perpetual $30 off $175 deal, but they have raised their base price on the WSM to $249 since I bought mine in October!!! I got mine there for $176 shipped. The discount is still valid, but the new base price is a deal killer. Looks like...
