    I have one built on on my performer. In short I preferred the hook on the inside of the lid that my silver had - I find the lid doesn't go quite far enough into the holder to get properly out of the way when direct grilling.

    No salmon how about spec'd trout?

    Here in the UK we get big, farmed, relatively cheap trout and in my opinion it's better than salmon on the WSM. I use a hybrid of the salmon method on the main site and the basic cure from the Raichlen rum smoked salmon recipe in How to Grill.
