    Mini WSM build details

I finally did another cook on my mini this last weekend. It performed extremely well! I did end up cutting out the entire bottom of the pot, and it helped a lot. I don't think the coals could breath well enough how I had it with just the small holes drilled out. There were a couple strong...

    Mini WSM build details

George, For now I have just removed the bottom tap handle. I haven't had time to work out a permanent solution yet. Probably do exactly what you suggested by running a rod through both tabs on the vent.

Pork Belly Tacos on the Mini WSM

This was my first attempt at Pork Belly, and I have to say it was a really fun cook. Two days ago I took 3lbs of pork belly and rubbed it with equal parts kosher salt and sugar. I let it sit sealed in a zip lock overnight in the fridge. The next day I rinsed it really good and then rubbed it...

Interesting way of cooking potatoes! I'll have to try that. Thanks for sharing.

    Carne Asada Tacos

That's a good idea. While I actually don't drink, I do love cooking with beer. I'll give it a try next time.

    Carne Asada Tacos

Last night the wife suggested we have Carne Asada Tacos. This is actually one of my favorite meals because it is SO easy and fast. So on my way home from work I stopped by the local carneceria and picked up a couple of pounds of Arrachera. My carneceria will pour some of their house made...

    Frittata on the grill

John, Total cook time was probably close to 1 hour. Only because I first cooked the sausage and then sauteed the onions separate before adding everything together. After adding it all together I think it took about 20 mins. Temp was about 250 (I was afraid to burn the underside).

Got a new toy for the Performer.......Rotisserie!

For those that know SSix personally, you know that if you are lacking a crucial item in your Weber armory, he will find it for you on Craigslist and then send you non-stop text messages until you buy it. That's how I ended up being a proud owner of a SS Performer, and now I can add a Rotisserie...

    Frittata on the grill

Thanks guys. It was good. I really like doing breakfast foods on the kettle. The next morning the wife was about to make pancakes and I said, "wait! Let me cook them on the weber!" Turned out way better:

    Frittata on the grill

We decided to have some breakfast for dinner the other night. So I tried doing a Frittata, I've never cooked one before. I started by cooking some sausage: Then I set the sausage aside and sauteed some onions: Then I added 12 eggs beat with a dash of milk, the sausage, and fresh bell...

The coating on my 18 is coming off!

I do small powder coat jobs out of my garage. I've coated exhaust mufflers and engines from small engine scooters and it's held up fine. Not sure if our kettles get hotter than that or not. I powder coated the one touch cleaning system on my performer and it has held up fine. Although that part...
