    4th of July Overnighter

    I got my fire started when the fire works got started ,lol. Have two 8# butts on .I am giving the injection a try. Chris helped me out here. I am doing one like advised and one I subed the apple juice with chicken stock. Have sand in the water pan. Temps are holding good at 225/230. Smoke wood...

    Need help getting high temps in the WSM

    The first time I used sand in the pan , I had trouble getting the heat down. Doing everything the same ,only using sand. I cut back on the amount of hot coals I start with , and it worked well the next time . Rick

    Paul Kirk's Southern Barbecue Sauce

    Thanks a bunch Keri. I think I might just try the store bought, and maybe , when I have the time, try to come up with a good home made one. You dont hear much about "chilli sauce" here in North Carolina , so you have been very helpful. Thanks again, Rick
