    Caramel Pecan Pie

    Thank you for the recipe, it sounds so good. I will give it a try. Do you ever make up a bunch and freeze them, if so how do they hold up , and is there any special thing I need to do if I freeze them? I think I will try the pre cook roasting ,"of the pecans" that also sounds like a great idea...

    Hey Rick, I dont look so much at the name, but the feel and the job I can do with it. Wusthof is my first pic in a chef knife. I also a a few Henckels. My cleaver is a Dexter and my long slicer is a Russel. What you like is the right one for you. Rick

    Temperature

    Like Keith said.... I am way too lazzy to keep up with all three vents. When the temps are on the rise, all three are open , but before I peak I shut them off and reg the temp with only one vent. If it is real cold/windy I may open more vents. Rick

    Hey Jerry, The rub I used was some thing like BRITU with double the garlic and pepper. I rubbed the chuck down with yellow mustard to hold the rub. It went on the top rack of the WSM , sand in the water pan,ring full of Kingsford, smoke wood was 4 chuncks of white oak, 2 cherry,2 pecan, and 2...
