    Butt Grilling Aftermath

No flare-ups with a WSM due to the design. Also, your gas grill shouldn't be damaged, it's made for the heat.

    post cook question

If allowed to rest as you described, smoked meats have the ability to "rehydrate" themselves, so to speak. The juices that have been rising to the surface will slowly be drawn back in, leving you with a juicier cut of meat than if you cut and served right away. IMO, ribs benefit a little from...

Got WOOD? Type of Wood for food!!

Good list Matt. I do love oak, but prefer not to use it when cooking pork ribs. IMO it's a little too strong. I REALLY like the way it works with beef!

    Brisket temp

Wrapping in foil and letting it rest for a while can really add to the juicy-factor. Did one rest and not the other? Maybe the fat was trimmed too closely? I've found a spike in the temp can also dry them out quite a bit.

Is it me or do ribs taste better after a few days

The extra time seems to give the flavors a chance to meld, as well as accentuating the smoke. I love 'em!

    1st cook questions

I'd try without foil first, then try a cook with it (3-2-1 style) later. They're all good! You'll want to eventually experiment with most all of the variations at some point. BTW, I've been having excellent results lately using foil. Just don't get too wrapped up in everything, and...

    Smoked Fish Question

Does anyone know how long smoked fish will remain fresh/safe to eat if stored in the fridge? I've made a bunch up into a spread and the days are ticking away...

    Lower grate on WSM

Hi Ken, I bet most here use both grills a large part of the time. If you're going to go through the time and commitment of a cook, might as well get the most Q out of it. I know I do. Chris has done some testing re: the temp differences. Read about it all here. Many will just rotate the meat at...

    Cleaning apple juice spray bottle

Tom, FWIW I've never noticed that it picks up the soap flavor as long as you rinse it well with water. Same goes for my plastic plates, cups, etc. (but if it did, I'd prefer the taste of soap to BLEACH ) Good luck!

    Cleaning apple juice spray bottle

I just do what Tom said. Even try putting a little hot soap and water in the bottle, and squirting that through, then follow with water for a rinse.

    Baby backs or spare ribs?

What Mark and Jim said! I do spares 99% of the time, and use variations of the BRITU with great results. Around here, spares are $1 - 1.50 less pp.

    It arrived!!! - some questions

Kingsford Match Light is not what you want. It is impregnated with a starter fluid. You want the plain old Kingsford.

    WSM help

Dave probably covered it all, but here's my specific suggestions: a Weber chimney, they hold more (~$13); a Maverick ET-73 remote dual probe thermometer (~$44) or a candy analog thermometer for around $10; a rib rack or 2, I think there is a current thread on the Brinkman or Charbroil (~$10); I...

    It arrived!!! - some questions

I don't know how things are up north, but down here a lot of the (swimming) pool supply stores carry BBQ items including wood. My local guy has 20lb bags of various flavors.
