    I use Tony's, just not too much of it. Here's a cool variation that I've used successfully a few times... Smoke the bird for an hour or so before you drop it in the fryer. Incredible! I just got one of the Big Easy infrared oil-less 'fryers' for this years turkey dinner. May smoke one too...

    Is this to help convince the spouse that you need another smoker? Then, yes of course you need one for beef. One for pork. One for poultry. And one for seafood. Just trying to help a brother out! :)

    Do you use a Food Saver ?

    The bags are not cheap. We fish a lot and freezing filets is where we use it the most. To me the real value is being able to capture leftovers from a fantastic meal to enjoy again later. It's like fishing and hunting, NEVER calculate the price per pound, especially in front of the wife!

    Spatchcock them and switch the top and bottom grate about 1.5 - 2 hrs in. Cooking for 28? Might want to do a practice run. Turkey is cheap this year.

    Smoking a Camel

    I've tried camel a couple of times at a Brazilian Churrascaria in China. Not good. Not good at all. The second try was due to my less than stellar grasp of Mandarin!
