    I looked for those eyelets on the BBQ Guru website when I ordered my DigiQ, but didn't see them. I'll look again and then call them if I have to. Will also take your advice and cover the bottom vents like you did if the eyelets don't help to cure the problem. Thanks for the help. T.

    That is probably it as I'm using my ET-73 with two food probes and the leads are running under the lid. Right now I've got the top vent about 1/2 open, which goes against the grain for me, but the pit temp. is stable at 225. Reckon I'll run into a problem leaving the vent that way?

    Brisket

    At Sam's that might be just for a flat. We bought a point (that we thought was a mis-marked flat) for less than that. It was still very good. Saw whole brisket in Walmart today for $1.68 and that seems to be their regular price around here.

    Spare Ribs vs. Baby Backs

    The St. Louis style in cryovac is what we like to cook. Medium price, medium amount of meat, seem to be more meat and juicier than BB's. Getcha some Smithfield brand. They put them on sale all the time down here for $2.99/lb.

    Steamed BBQ in Georgia?

    Sounds close to par-boiling(sp.) to me. I smoke on the WSM with beer--but I try not to let any get on the meat. Apparently he blew in, grabbed a few recipes, made up a few others, then blew out.
