    Woohoo! Successful "catering"---barely (long, vanity)

That green kettle is great! Definately qualifies as "groovy". Congrats. I'm a little bummed that I can't find beef ribs around here. That is, unless I want to buy and trim up a full crown roast. Well, maybe that's just what I will have to do. You know, of course, that your family is going to...

threw the chickens on...what about the giblets??

Ron, The neck is usually wrapped up with the rest of the giblets. I have never seen a chicken or turkey with the neck bones attached other than the one I watched my mother wring! It was an unnerving site for such a young child. I got better. This is a simple recipe and really hard to screw up...

threw the chickens on...what about the giblets??

One word... "gravy". Combine the giblets, some garlic cloves, and some chicken stock. This is the time to add aromatics like celery and onions if that is what you like. Cover and bring to a boil. Uncover and reduce heat to a simmer. Skim off any gunk that has collected on the surface. Cook the...

    Albertsons 99cent Danish Ribs

I don't want to disagree with Kevin, he has waaay more experience than I. But at $0.99/lb, they might be pretty good for boiling down into beef stock/broth stuff.

    Red-Eye Gravy

RE: Gravy Lesson For Keri's Biscuits Ok I'll start, but I'm really looking forward to yours. I make a cream gravy too, but since that was already mentioned, I thought I would contribute something different. ------ Red-eye gravy Fry up a two or three 1/4" slices of ham (I like the brown sugar...

    Buyer's remorse

I would be surprised to discover that someone here has much negative to say about the "Big Green Egg". Although I do not have one, it was one of the smokers I considered before purchasing my WSM. My neighbor across the street has a Yamado and the ceramic smokers do a fine job. The only...

    When to "pull" your butt

Shawn, I don't know if yours can be washed. I pretty much counted them as "no deposit, no return" when I tried it. It hasn't been a problem yet (six or seven spins), but that's not to say it won't. I air dry them. After the spin cycle, they dry pretty quickly in the sun.

    When to "pull" your butt

For pulling, I have had the luxury of waiting for it to cool down a bit before digging in. It still stung a bit, but was manageable. In a pinch, say the butt took longer than you planned, could you use a pair of cheap cotton, polyester, or nylon gloves with food service plastic gloves over top...

    When to "pull" your butt

I use leather welding gloves. I run them through the laundry after each smoke. I was worried that they would dry out and stiffen up, but that has not happened yet. They were pretty cheap, but I don't remember how much I spent (assuming I even looked). I also like the long cuffs when I reach down...

    What makes a smoke ring?

If you run across an issue with the reddish color, try and explain pastrami. Done well, it's red all the way through... Everybody likes a good pastrami on rye, don't they?

    AWAY I GO!!!

Took a look at the recipes and this one struck me; "Cholent with Beef Brisket " "Bake in a <edit> 250 degree oven 24 hours" Sounds about right to me. Might have to give that a try.

    ET-73 Reasonable Expectations

As I think about this (and consider what I engineer surrounding wireless LAN stuff).... If the signal passes through a wall at 90 degrees, it offers pretty low signal dispersion. If the signal passes through an obstruction at an extreme angle, that 3/4" of stucco could behave more like a foot...

    ET-73 Reasonable Expectations

"How do you know for sure you aren't getting a signal" From what I have seen, the receiving unit will just stick at a temp. If you walk over to the transmit unit (leave the receiver behind), the temp display will be blank, or the temp will be something completely different. Receiver and...

    Smoking in a thunder storm

Maybe this is more complicated than it needs to be. The dome temp is only 250 degrees or so and the combustion temp for cotton is 400-500 degrees or maybe higher. How about taking a 4-5" strip out of an old t-shirt torso and stretch it (well mine would have to stretch) around the area of the...

    ET-73 Reasonable Expectations

The ET-73 appears to only transmit when there is a change. The temps will display on both units and they will read the same if it is operating properly. If the transmitter numeric display goes blank, it is not functioning and the receiver will just stick on last reading it received. It could be...

    Salt

I've never been able to tell the difference, but... Apparently, your generic Morton's table salt has anti-clumping stuff added and somebody, somewhere, can tell the difference. Kosher salt is also coarser grained and the size and shape is supposed to allow it to absorb more moisture than other...

    New slogan for TVWB

I have had the good fortune to know several of the clever fellows that were key architects back in the DARPA days. I've been in this data telecomm business for a very long time. This web site represents the best of what the Internet has to offer and is precisely the kind of dialogue envisioned...
