My wife is Chinese so is very used to picking her way thru gristle, tendons etc.; so I smoke the whole spares and at the end of the day, they have disappeared!

I'll be doing some full-size Beef Ribs (again), legs and thighs on the kettle, and corn on the cob tomorrow for my Amateur Pool Party. oh yeah, my famous (to me) smoked salmon and wifey will do a larg batch of Chinese Potstickers. Served with Iron Fist Golden Age and Uprising...shoud be fun :)

I mix K-B with various makers of lump, and on a regular basis...a layer of K on the bottom to ensure a full burn and then lump on top. I use mesquite from a number of suppliers- origin-in Mexico, and lump from RO, Cowboy, Just Smoked Salmon, and a host of others, really.

My worst mistake to date was cooking for a large group on my Outdoor Kitchen Kettle, with the grill full of food. Took off the cover then got buttonholed by a guest for some kind of a question or help request...exactly what eludes me. Any way, upon return the fire was a full 5 feet above the...

I've put mayo..well usually horseradish on a hot link, but I'm with Steve...a no catsup fellow. Food looks great... We have a strong San Diego contingent. And, TJ dog is the correct name, for those of us who frequently eat south of the border!

Cafe area is to the far right, and also is a door underneath where I store my rotisserie and 22" weber wok. Counter will fit 2-3 folks, have yet to build the matching bar stools. Project yet unfinished!!
